When coffee arrived in Italy in the 1600s, it was largely condemned by the clergy, that is until Pope Clement VIII tasted it and gave it his official seal of approval.

The Papal seal gave rise to coffee houses throughout Europe and the beverage evolved from the drink of choice at breakfast to an all-day refreshment.

An innkeeper in Milan heard the good news.

Francesco Bianchi loved coffee so much that he’d been drinking it in secret. But because he was so devout, he had been feeling terribly guilty about it. 

With no reason to feel guilty anymore, he could now serve coffee to patrons of his inn. This was something to celebrate! So, the inventive innkeeper created his own special mix of coffee and spirits to toast his now guilt-free pleasure.
